Quesadilla Night

Ingredients
- 4 large flour tortillas
- 2 cups shredded Mexican blend cheese
- 2 tablespoons butter
- Optional: diced cooked chicken, black beans, diced bell peppers
Instructions
- 1Heat a large skillet over medium heat
- 2Butter one side of each tortilla lightly
- 3Place tortilla butter-side down in skillet
- 4Sprinkle half with ½ cup cheese (and any fillings)
- 5Fold tortilla in half, press gently with spatula
- 6Cook 2-3 minutes until golden, flip carefully
- 7Cook another 2 minutes until cheese is melted
- 8Let rest 1 minute, cut into triangles

- • Low and slow = crispier tortilla
